This is one of my favorite ways to eat cauliflower, especially for those trying to avoid grains. Works great as a rice substitute!

INGREDIENTS

  • 1/2 a head of cauliflower
  • avocado, grapeseed, or coconut oil
  • salt
  • Optional: Cajun seasoning

DIRECTIONS

  1. Remove the leaves from the cauliflower and chop it into florets, just small enough to put into the food processor easily.
  2. Blend until cauliflower is pulverized.
  3. Add a few tablespoons of oil to a pan, and turn heat on low; add cauliflower, salt to taste, other seasoning as needed, and sauté until soft.
  4. Use as a side, or substitute for any dish that calls for rice.
